Meatball Risoni Bake⁣

Ingredients

2-3 packs NuPasta Risoni, depending on your baking dish⁣
½ cup ricotta or mascarpone ⁣

For tomato sauce:⁣
1 can crushed tomatoes (choose a brand with the lowest sugar content!) ⁣

½ small yellow onion, finely chopped⁣

2 garlic cloves, minced⁣

Salt, pepper, oregano, basil and red pepper flakes, to taste⁣

 

For meatballs: ⁣
1 pound lean ground beef⁣

¼ cup grated parmesan cheese⁣

1 egg⁣

¼ cup heavy cream⁣

2 tbsp parsley ⁣

1 tbsp grated onion (it will be mush)⁣

2 cloves grated garlic⁣

Salt and pepper, to taste⁣

Directions

  • Directions: ⁣
    1. Drain, rinse and pan-fry NuPasta Risoni for 2-3 minutes to cook out excess liquid. Set aside.⁣⁣⁣2. In a bowl, combine ingredients for the meatballs and mix well, adding more parmesan cheese if the mixture is too wet⁣3. Scoop with an ice cream scooper and form into balls on a parchment lined baking tray⁣

    4. Bake for 30 minutes at 400 degrees, flipping halfway through⁣

    5. In a pan, begin cooking your sauce by sauteing garlic and onion for 2-3 minutes, then adding the rest of the ingredients⁣

    6. Simmer for 15-20 minutes, set ½ cup aside, then combine with risoni ⁣

    7. In a buttered baking dish, layer sauced risoni on the bottom, add in meatballs, then top with leftover sauce and ricotta ⁣

    8. Bake at 400 degrees for 10-15 minutes⁣

    9. Garnish and enjoy!⁣
